This coffee cake recipe is delicious. It has the perfect amount of cinnamon and the crumb topping sends it over the top. Add some cream cheese and you have the perfect coffee cake. It’s light and extremely moist…and well you should just go make it now!
Cinnamon Cream Cheese Filled Coffee Cake with Crumb Topping
Crumb Topping:
- 1/2 C. brown sugar
- 1/4 C. sugar
- 1/4 C. flour
- 1 stick butter, melted
- 1/4 tsp. salt
Cake:
- 1 C. flour
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/4 C. butter
- 1/2 C. + 2 Tbs. brown sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 C. plain greek yogurt (I used Fage)
- 4 oz. cream cheese
- 2 Tbs. sugar
- Preheat oven to 350 and grease an 8×8 baking dish
- For the crumb topping, in a bowl combine both sugars, flour and salt. Add melted butter and stir until completely mixed. Spread out onto flat surface to dry and set aside.
- In a large bowl beat softened butter and sugar. Add egg and vanilla.
- In a separate bowl mix flour, cinnamon and baking powder.
- Add dry ingredients to wet, followed by the greek yogurt.
- Pour half of the batter into the baking dish.
- Combine cream cheese and sugar and spoon onto cake batter. Swirl with a knife.
- Pour in remaining batter and finish with crumb topping.
- Bake for 30 minutes or until tooth pick comes out clean.
