Hello! How has your week been so far?! Mine has been pretty blah and uneventful, but I did do something exciting yesterday…I got my hair colored! I typically don’t do much with my hair and have not had a haircut in two years and haven’t had it colored at a salon since high school. Even then, I stuck to slight color changes- sometimes lighter, sometimes darker. I have been itching lately for a change and after seeing my best friend’s new hair this past weekend, I knew that was what I wanted. She works at a salon and hooked me up with an awesome colorist who did exactly what I wanted! For me this was a huge change, but I am loving it!

Moving on. I have an AMAZING and simple recipe for you today. This may be one of my favorite things that I have made so far, and it is actually on the healthier side in the land of sugar and butter loaded brownies and cookies! They are no bake and require only 4 ingredients! In fact, you probably have all of those ingredients in your cabinets right now! So gather your ingredients and go make these delicious bites of goodness!

No-Bake Chocolate Chip Oat Bites
Makes 18-20 bites
- 15 dates, finely chopped
- 3/4 C. cookie butter (I used Biscoff!) or peanut butter
- 1 C. oats
- 1/2 C. chocolate chips
- In a bowl, combine chopped dates and cookie/peanut butter.
- Add oats and stir until completely mixed. Add chocolate chips.
- Scoop out spoonfuls of dough and roll into balls with hands.
*Store in fridge*
