Today I am going to share with you my granola recipe, and I PROMISE you will never want to buy store-bought granola again. I used to make this once every couple of weeks or so, but for whatever reason haven’t made it in awhile. I started making it because granola from the store is either ridiculously expensive or tastes like bird seed. Well, I do not want my granola to taste like bird seed, I want it to taste like a hard cookie and be super clumpy. So after multiple different attempts I came up with this recipe and I have never bought it from the store again.
The key to a super clumpy granola is eggs! I personally like to use egg beaters in granola, but you can use a regular egg as well! Also this recipe calls for butterscotch chips, but you could easily substitute any other flavor chips for the butterscotch! I have also made this with peanut butter chips and with cinnamon chips- butterscotch is my personal favorite though!
Butterscotch Cookie Granola
- 1/4 C. butter
- 2 Tbs. Truvia (or sugar)
- 1/4 C. egg beaters (or 1 egg)
- 2 C. butterscotch chips
- 1/3 C. flour
- 4 C. oats
- 3 C. dry cereal (I used cinnamon Special K)
- Preheat oven to 300
- In a large saucepan over med/high heat, melt butter.
- Stir in Truvia/sugar and 1 C. of the butterscotch chips. Stir until chips are melted. Add egg.
- Add flour and stir until completely mixed. Remove from heat.
- Add oats and cereal and stir until completely coated.
- Stir in remaining 1 C. butterscotch chips.
- Pour granola onto greased baking sheet and place in oven.
- Bake for about 60 minutes, remove and let cool and crispen-up.
Seriously you should go and make this like right now! But I will warn you it is addicting and hard to stop eating!
