I don’t know about you, but to me their is nothing better than the smell of warm banana bread baking in the oven… Well, maybe eating it!
I pretty much love any kind of banana bread, but add a brown sugar crumb topping and it is hard to beat. Slice it up and add a slab of butter and I’m in love.
Banana Bread with Brown Sugar and Oat Crumb Topping
- 1 1/2 C. sugar
- 1 tsp. cinnamon
- 2 1/2 C. flour
- 1 C. oats
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3 eggs
- 2 ripe bananas, mashed
- 1/4 C. butter, melted
- 1 tsp. vanilla
CRUMB TOPPING
- 1/2 C. brown sugar
- 1/4 C. sugar
- 1/3 C. flour
- 1/2 C. oats
- 1/4 C. butter, melted
- Preheat oven to 350 and grease a 9×5 loaf pan
- With a mixer, beat eggs until frothy
- Add sugar, mashed bananas, vanilla and melted butter
- In a separate bowl combine flour, baking powder, salt and oats
- Slowly add dry ingredients to wet. Beat until completely mixed.
- Add to loaf pan and set aside.
- To make the crumb add both sugars, oats and flour to melted butter
- Spread on top of bread batter and place in oven
- Cook for about 1 hour and 20 minutes or until knife comes out clean
