This dinner came together because I originally wanted spaghetti for dinner, but didn’t want to take the time to cook the beef AND boil noodles. I didn’t have ricotta for lasagna, and didn’t have any pizza dough. As I continued to stare into the refrigerator, I noticed a can of biscuits and thought WALLAH! I could use the biscuit dough as the pizza dough and easily bake it in the oven in a muffin tin. So here it is, Mini Biscuit Pizzas.
Mini Biscuit Pizzas
- 1 can refrigerated biscuit dough (I used jumbo-sized biscuits)
- 1 jar spaghetti (or pizza sauce)
- 1 lb. ground beef
- shredded mozzarella cheese
- basil for garnish
- Preheat oven to 350
- Place a flattened biscuit into each muffin tin
- Brown the ground beef and drain the fat
- Combine spaghetti sauce and beef and spoon into each biscuit cup (You will have quite a bit leftover)
- Top each with shredded cheese and basil
- Bake in oven for about 15 minutes or until cheese starts to bubble and brown
